At the table

Put the couscous in a heatproof bowl and pour over the hot stock. Cover and leave it until the liquid is absorbed, following the time on the packet.

Fluff gently with a fork. Add olive oil, lemon zest, and parsley, then taste and season. A squeeze of lemon brings the flavors together.

Serve warm with vegetables, or let it cool for a simple lunch.
